12-15 is the combination of two departements, Aveyron and Cantal, so as to pay homage to the previous generation of Parisians who 'went up' to Paris to find work.
Julie Costerousse is the daughter of brewers and grand daughter of Auvergne and Aveyron country folks. She has kept alive the tradition of Auvergnat Parisians in her café bar, thus combining modernity and tradition.
